Crouton with  DOP buffalo mozzarella’s stracciata, Cantabrian anchovies and shiso salad

 

Fried tomatoes stuffed with Provolone del Monaco cheese, basil and San Daniele’s prosciutto crudo on a guacamole concassé

 

Breaded and baked  Mediterranean red tuna with endive and balsamic vinegar

 

Gragnano’s paccheri pasta with cherry tomatoes and  local blue lobster

 

Green ravioli stuffed with pork sausage and provola cheese on a pumpkin velouté topped with Montella’s black truffle

 

Sea bass au gratin with vegetables flavoured bread on a light potato cream, tomato petals and Bronte pistachio grains
